• My favorite Apple pie recipe •

As the temperature dropped outside, we decided to stay in on a cold and grey Sunday, which turned out to be the day that we would welcome colder weather, winter jackets, red cheeks and running noses.
In an old notebook I brought with me from Denmark, we found our family Apple pie recipe, which we normally would bake in our little summerhouse kitchen using only apples from our own garden. Little busy hands made for happy hearts when we after a few hours of baking all sat down together and celebrated the season, the birth of a new cousin and the upcoming holidays.

10,5 ounces of flour (300 gram)

5,3 ounces of butter (150 gram)

1 tablespoon of sugar

1 egg yoke

6 large apples

3,5 ounces of sugar (100 gram)

2 tea spoons of Cinnamon

Mix flour and sugar in a large bowl and cut the butter into smaller cubes. Use your fingertips to gently work the butter into the flour and sugar until the mixture resembles breadcrumbs. (this is normally one of the things my children love to do).

Add the egg yoke to the dough and gently mix with your hands until the dough comes together work the dough into a ball. If the dough is too dry you can add a tiny bit of the egg white.

Let the dough rest in the fridge while you prepare the apples. Cut out the apples in slices, and remember to remove the cores. As long as you cut the apples slices really thin keeping the peel on will only add a nice texture, flavor and color to your pie. Soak the apples in lemon water to avoid them getting brown.

Roll out the 2/3 of the dough to a thin pastry and use it to line a pie dish. Use a fork to make some tiny wholes in the pastry.

Add the apples however you want to. My girls always like to lay them out in a nice pattern. Mix the sugar with the cinnamon and sprinkle it over the apples.
Take the rest of the dough out of the fridge, roll it out and cut it into whatever shapes you prefer. I always get a lot of different requests and this time a caterpillar was added to our pie for the first time. Lay out your little figures on top of the pie, or simply use the rest of the dough to weave a Lattice top for your pie.

Put it in a hot oven and bake it a at 375º F (175 ºC) for about 25-35 minutes or until the crust is golden and crisp and the apples are soft.

Serve it with sour cream while it’s still a bit warm.
